At Josè Restaurant, we've chosen to strip away the superstructures. We don't seek geometric perfection on the plate, but the vibration of flavor that arises when an ingredient meets the hand of someone who respects it.
Vesuvius isn't just a backdrop, it's the secret ingredient: the volcanic rock that holds the sun, the ash that feeds the roots, the salt-laden air drifting down from the crater. Every bite is a geology of flavor, a homecoming that skips the well-worn paths.
Alongside the kitchen, a more casual offering: gourmet pizzas with selected flours, slow fermentation and local ingredients, baked in a wood-fired oven.
We serve them in the relaxed atmosphere of the Villa's gardens, from April to September, when Vesuvius is best enjoyed outdoors.
